Mochi is a type of Japanese rice cake made by steaming glutinous rice. Very chewy and sweet, it is often referred to as “o-mochi”, and is considered a sacred food. Mochi is an indispensable part of New Year celebrations in Japan and is commonly sold and eaten during that time.

There are many types of mochi and many popular uses in confectionery as well as in food. Some of the most popular include:

Daifuku is a soft round mochi stuffed with sweet red bean paste or white bean paste.

Ichigo daifuku is a version containing a whole strawberry inside.

Kusa mochi is a green variety of mochi flavored with yomogi (mugwort).

Kinako mochi is a mochi dish that is traditionally made on New Year’s Day for good luck. Its preparation includes roasting the mochi over a fire or stove, then dipping it into water, finally coating with sugar and soy flour.
