Onigiri are a type of Japanese rice ball, made from sticky-short or medium-grain rice and are usually formed into triangular or cylinder shapes and sometimes wrapped in roasted seaweed, nori.

People often have the misconception that onigiri is a type of sushi, but it is not. The difference between onigiri and sushi is that onigiri is made with plain steamed rice, while sushi is made of steamed rice seasoned with vinegar, salt and sugar.

There are a variety of onigiri with different kind of fillings. The most common filings are umeboshi (Japanese salty pickled plum), shiozake (salted salmon), katsuobushi or okaka (bonito flakes moisten with soy sauce), shio kombu (salty kombu seaweed), tarako (salty cod roe) or any other salty or sour ingredient. These fillings are also used as natural preservatives.
