Soba noodles are a type of Japanese noodles made form buckwheat flour. They are very nutritious and have a unique aroma and texture when eaten.
The popular noodles are prepared in various dishes, both hot and cold.
Here are some of the most popular soba dishes:

‘Zara soba’, or ‘Mori Soba’, is perhaps one of the most preferred and easiest to eat soba dish. Cold noodles served on a flat bamboo basket, or plate, are dipped into the cold broth before eating them. Ingredients such as wasabi, spring onions and sesame can be added to the broth.

Another common summer dish is the Soba salad. Cold soba noodles are mixed with vegetables (and sometimes fish) in sesame dressing.

‘Kake Soba’ is soba served in hot broth and topped with thin slices of scallion.

‘Kitsune Soba’ is soba served in hot broth and topped with deep-fried tofu, or ‘aburaage’.

‘Tanuki Soba’ or ‘Haikara soba’: Soba topped with deep-fried tempura batter or ‘tenkasu’

‘Tsukimi Soba’: soba noodles in hot soup with an egg topping.

Another dish that uses soda noodles is ‘yakisoba’. This traditional Japanese dish consists of fried soba noodles mixed with small pieces of meat, cabbage, onion or carrot and flavored with yakisoba sauce, salt and pepper. It is perhaps one of Japan’s most common street foods.
Soba is considered as inexpensive fast food, most commonly served in small restaurants and standing soba restaurants, but it can also be found in pricey specialty restaurants.
