The word teppanyaki derives from ‘teppan’ which means iron plate, and ‘yaki’, meaning pan-fried.

Teppanyaki is a modern style of Japanese cuisine, where food is being cooked on a large heated iron plate, in front of guests at restaurants. The ingredients usually consist of seasonal meats, poultry, fresh seafood and various types of vegetables. Teppanyaki uses light seasonings such as soy sauce, vinegar, salt and pepper.

The plate is big enough to allow the chef to cook all the ingredients at the same time.

If seated at the counter, guests can enjoy watching the skilled chefs juggle and perform the fast lightening cutting, while waiting for the food to be served. Many chefs will not only prepare delicious food, but will also perform fire shows to entertain their guests.

4

Many teppanyaki restaurants feature Kobe beef, a delicacy renowned for its flavour, tenderness, and fatty texture.

5

Small family-run restaurants, where the owners are doing the cooking and serving, are more friendly to your wallet and offer reasonable prices, while fancy, expensive restaurants, serve food at much higher price and a wider variety of courses.

Steakhouses are just about everywhere in Japan, and the best way to understand teppanyaki is to experience it for yourself.
