Yakitori, grilled chicken skewers

Yakitori is a popular Japanese type of bite-sized skewered chicken, dipped in a traditional Japanese sos or salt, and grilled over charcoal. Although the term yakitori translates as grilled chicken, non-chicken skewers such as skewered peppers, tomatoes, mushrooms and asparagus are also served in yakitori restaurants. The chicken selections also include different portions of the chicken such as skin, organs and cartilage.






Yakitori restaurants, or ‘yakitori-ya’ are far from fancy. They are usually small restaurants, often consisting of few tables and few stools pushed up against a counter, or stands that grill yakitori-to-order. The prices are usually cheap (from ¥150) and you can pay for piece or for plate.

When ordering yakitori, you must specify wether you want the Japanese sauce or salt for the flavoring. The sauce used for flavoring is called ‘tare’, a sweet sauce made up of mirin, sake, soy sauce and sugar.

Types of popular chicken yakitori:

・Momo: yakitori made with meat from the thigh.
・Mune: yakitori made with meat from the breast.
・Negima: yakitori made with negs (onions) and meat from the thigh.
・Torikawa: yakitori made with strips of chicken skin and grilled until crispy.
・Seseri: yakitori made with meat from the neck.
・Tsukune: yakitori made with minced chicken meatballs. Eggs, vegetables such as shopped onions and spices are added to the meatballs.
・Tebasaki: yakitori made with chicken wings.
・Reba: yakitori made with liver.

If you want to try different flavors, ordering a “yakitori moriawase” will bring you various types of yakitori on one plate. The plate for a single person consists of three to six skewers. Since yakitori-ya are everywhere, you should be able to find your favorite restaurant wherever you are in Japan.
